Trying to live on my own terms.
Okay, so, I've got a few base clients, but it is taking longer than I hoped to have full time work, or at least enough billings to fully support myself (thankfully, dear old Dad has enough work to be done around the house, I am at least paying my way in labor).
So, I'm starting a personal assistant business in the neighborhood. It was either that or a part time job. I'd prefer this, and I'm starting early enough that if it doesn't work out, I'll likely still be able to pick up a part time gig closer to the holidays.
If you could pay someone to do one thing in your life to make your life easier, what would it be?

Confront people that need to be confronted. This causes me much angst, and it's something I've been having issues with recently (despite engaging in said confrontation).
clean my house.... walk my dogs...
i wish i had your guts. i would love to do what you're doing.
Good for you! I'd pay someone to organize my office at work, and to walk the dog for my parents. If I can ask, how are you advertising yourself? I ask, because I think my mom would be great at being a professional organizer, but I'm at a loss on how to get her started. (this is more my idea then hers.)
You know, these things take time, and you haven't been out of the corporate world that long, really. You are an amazing, talented, clever woman, and a hard worker with a goal. You'll be fine, but you do have to give it some time. Plus, the economy isn't the best right now, so you're having to fight the inclination of everyone (well, most everyone) to tighten belts.
As for your question, I'm not sure what I would pay someone to do. Well, there are the things I already pay for - someone to change my oil or do other car maintenance work, house repairs, that sort of thing. I should pay someone to design my web site (*ahem*), but I'm not exactly flush in the excess fundage at the moment, otherwise I would. I may have to trade home cooking for that, once I'm home and someone comes to visit me. Singapore noodles with Thai Sweet Chili sauce, anyone? Can't guarantee what else they'll have in them, since I have yet to make them the same way twice, but almost every batch has been at worst tasty, and at best darned good if I do say so myself.
Oops, sorry, got off the subject there. Yeah, I'm not a good person to ask, I suppose, because generally if I can't do something myself, it doesn't get done for a while. Good luck with your venture, though!
Daily head....oh wait....that's probably not what you meant is it?
@EliseTheStranger - You know I bet it would be easier to confront people on your behalf than on my own. I wouldn't be emotionally invested.
Yardwork, grocery shopping, cleaning my house. All the things that desperately need to be done right now, but I haven't been able to do. I believe that a neighbor is a personal assistant. I can ask her what you might expect.
CLEAN.MY.HOUSE.
PAINT.MY.HOUSE.

Heh.
Help me organize my life..
Best of luck in your new endeavors. do not lose hope because things might start out slow...We are in scary times and people are going to be tight with money until we all start feeling the prosperity again..
Just a note on being a personal assistant. Be very aware of what your boundaries are, in other words, don't let someone take advantage of you just because you need the work. I know you probably already know this, but use contracts to define your responsibilities.
